It goes both ways. If you niche down very deep you might assume authority in that particular subniche but at the same time you exclude yourself from a lot of potential business. If you are sure there's enough brewery gigs in the foreseeable future to keep your business afloat or even thrive, it's a good idea. But very few photographers can afford to turn down everything but beer cans. I believe most are struggling to find any clients at all.
