PATTY PAN SQUASH SOUP - Serves 4
INGREDIENTS
2 Shallots
2 Garlic Cloves
1½kg Patty Pan Squash
1 Litre Vegetable stock
To Serve
Soured cream
Sea salt flakes
Black pepper
METHOD
Slice the peeled shallots and garlic cloves.
Remove the stem end and bottoms from squashes. If the skin is tough, peel them. Chop the squashes into 1cm chunks.
Sauté the shallots and garlic in a large pan until they just take on a bit of colour.
Add the squash to the pan and sauté for another 5 minutes.
Add the stock to the pan of sautéed vegetables.
Cover and cook for 10 minutes or until the squash is soft.
Remove from heat and let rest for 10 minutes.
Use a hand blender or food processor to puree squash and stock until very smooth.
Serve with the salt and pepper sprinkled on top with a dollop of soured cream.

It a god 'un Mags and so easy to adapt to your own tastes. I put extra chilli in the 2nd batch - hope I don't regret it when I defrost them LOL

Will def give this a go. I have a yellow sunburst squash & it’s prolific! I’ve boiled mine for 10-15mins, cut the top off, scooped the innards out then stuffed with chili, covered in cheese and popped in the oven for 30mins. Delicious…..🎉

Cheers Denise. If serving like this for others, I'd suggest warming the "bowls" in the oven first - the soup will stay warmer longer LOL
Never grown them Squash because didn't know what to do with them so that's more seeds added to list for next year looked lovely

Hi steve ive only ever grown patty pans once but think that might change now, also val liked how you used a big one as a bowl lovely touch.
I was so worried about slipping with the knife and making a hole in the "bowl" LOL

The brussels are in a tray on the wall, the tall thing behind me is a strawberry tower.
I do like the patty ones as their flavour is not too overpowering.

Great idea, yes!! (I want to grow that next year) Being a more robust Winter type squash it could stand a few more spices like cumin, paprika and turmeric powders. Just remember, you can always put more in but you can't take any out! The world is your oyster!

What did we do before immersion blenders? Mine gave it up after 25+ years….🤣. I had to replace it. I do like the ability for multiple speeds on the new one. ❤ the bowl for serving.
My stick blender broke a few years ago so I bought a professional one - all metal construction. I forgot about the non-stick pans and scratched the base of my big soup one pretty badly! On ebay the next day and I got a cheapo plastic one from Amazon - the one in the video LOL
