- Buttermilk Substitutes ~ 6 Alternatives
Ratios are as follows:
For White Vinegar Version - 1 cup of milk (or half & half)
1 TABLEspoon white vinegar
For Lemon Juice Version - 1 cup of milk (or half & half)
1 TABLEspoon lemon juice (if using fresh lemon, be sure to strain well)
For Cream of Tartar Version - 1 cup of milk (or half & half)
2 TEAspoons cream of tartar
For PLAIN yogurt version - 3/4 cup plain yogurt
1/4 cup milk (or half & half)
NOTE* Yogurt brands can differ as far as thickness goes. I suggest if your yogurt is on the thin side, that you stick to the ratio given. If your yogurt is extremely thick, I would start by adding 1/2 cup yogurt to 1/4 cup of milk. Mix well. If on the thick side, add 1/4 cup more of milk instead of yogurt, still ending up with 1 cup total
For sour cream version - 3/4 cup sour cream
1/4 cup milk (or half & half)
NOTE* sour cream brands can differ as far as thickness goes. I suggest if your sour cream is on the thin side, that you stick to the ratio given. If your sour cream is extremely thick, I would start by adding 1/2 cup sour cream to 1/4 cup of milk. Mix well. If still on the thick side, add 1/4 cup more of milk instead of sour cream, still ending up with 1 cup total

My mother grew up through some extremely hard times so throwing expired buttermilk away was a big NoNo when I was growing up. She would just shake it up real good and use it. She'd say, don't drink it but it's fine to bake with. She died kill us so I guess it's ok. U really could not tell the difference. I use the powdered kind now. It does ok I suppose. I've heard of using vinegar, sour cream, and plain yogurt but haven't tried either one one yet. Maybe next time I need buttermilk. Very helpful tips Hedi😀. Tyfs God bless you
