Sorry for the late reply. I'm unsure of the exact settings I had at the time, so here are some tips: put on a further offset and lower your fov. That should help you get the look your going for, from there it's just personal preference.
I record my videos on my PC and not from a quest, so I always get HD video. I think you can go to settings on SideQuest and there should be a 1080p option, but I don't know for sure.
