    Tom, looks like you're getting fit. If so, congrats man. You're looking great. As someone who also loves BBQ, I know how hard that is. It's been 2 years of disciplined eating for me to get fit. Fist bump. Keep it up, brother.

    i think the single most important point to remember with these ribs, is to NOT over cook them.... that bite, firm but tender, meat pulls away cleanly, is just the best.

    I love me a savory rib as well. My step dad, who’s from Mexico, always made savory ribs. Just a little lawrys and pepper and cooked them till they were almost fall off the bone.

    The Lone Star brisket rub is outstanding on your version of Texas style turkey breast, I’ve tried TX rub, and standard SPG and the LSBR adhered and developed an awesome bark, will definitely try on spareribs next 👍

    I just tried this recipe on some Costco spare ribs using the exact seasonings. I put on less seasoning than Chef Tom and it was very salty. If you try this, use very light seasoning. Otherwise, it was pretty good.

    I was bracing for the cotton candy butter, brown sugar and honey at the wrap. Thank you, Tom for skipping that. I like to taste the pork and have never understood candy tasting ribs.

      I somewhat agree. The TX savory profile is my favorite BUT sweet does go well with pork and kind of nice to change it up now and then.

      @@TMac0925 If sweet is what you are looking for. I like savory. This is what turned me off to comp ribs - make them tooth ache sweet in one bite for judges who wouldn't know a well cooked savory rib if it hit them in the face.

    Could be true but in any case, before or after, I would have to cut off the cartilage section and use whatever meat is in that for a pork burrito or something else. Chewing around the cartilage isn't interesting for me. But for sure the membrane should be pulled off before cooking them, its too chewy if left on. Low and slow is best almost every time but some folks do get lucky cooking them at higher temps and they turn out pretty good.
