Delicious Masala Chai Panna Cotta Recipe With Peanut Brittle || Infinity Platter || 2022

- This creamy, smooth & luscious dessert is so easy and quick to make. You’re going to absolutely love it! Here are the ingredients you need -
Ingredients -
60g - 70g Milk
1 Cinnamon stick
2 Cloves
2 Cardamom pods
1 inch piece Ginger or 1/8 tsp Ginger powder
1 Star anise
1 small piece of mace or a pinch of nutmeg
Pinch of Black Pepper
1 tbsp Tea powder (I used Taj Mahal tea)
480g Heavy Cream
65g Sugar
1 tsp Vanilla extract
3/4th - 1 tsp Gelatine powder
3 tbsp Cold water
- In a pan, add the milk and all the spices and bring it to a simmer.
- Add the tea powder and stir for 30 seconds
- Add the cream and bring to boil.
- Soon as it starts to boil, lower the heat & simmer for 5 minutes. If you want a stronger tea flavour, simmer for longer.
- After 5 minutes, add the sugar and vanilla extract and simmer again for a minute.
- In a separate bowl, add cold water and sprinkle the Gelatine and leave it aside for a few minutes to bloom
- Add the Gelatine to the cream and tea mixture, turn off the heat and gently mix everything well together
- Strain the mixture and pour into your choice of serving bowl (silicone mould, ramekin, glass cup)
- Leave in the fridge to set for atleast 3-4 hours or leave it overnight
- Before serving, leave it outside for half hour for it to soften a little and then serve.
- To serve - Either put the silicone mould in hot water for 5-10 seconds and invert onto the plate or enjoy eating directly from the bowl.
Peanut brittle -
110g Sugar
2 tbsp Water
2 tsp butter
1/4 tsp Salt
40g Peanuts
- In a pan, add the sugar and water and simmer in medium high heat until the mixture turns into a amber fold colour. This should take you roughly 10 minutes
- Soon as the mixture becomes this colour, turn off the heat and add butter, salt, peanuts.
- Mix everything well together and pour it onto a silicone sheet and leave it to set
- Break into pieces and garnish the panna cotta
