I have never made it myself :( I usually just buy it from my grocery store because they have a really good vegan one that I don't think I could ever replicate hahaha

Bring pot with rice in it to a simmer. Once bubbling, put lid on and turn burner as low as it can go. Cook 15 minutes. Turn off burner and let sit for a few minutes. Do not open the lid until it is completely done.
How do you find all of these vegan "fish" stuff and so forth. I have a such a hard time finding these things at my local Asian market. :( I'd buy the vegan shrimp but it's a whopping $9.99 USD for a bag -- that's too much. So I just stick with Seitan and Tofu. I feel so inadequate.
The whole "we're going to over cook it a little bit" totally reasonated with me! I wonder if it's an Asian thing? I know throwing out food was never an option when I was growing up. I mean (knock on wood) no one's gotten food poisoning in my house yet, so maybe it does work...lol
