When I get this in a restaurant, the orzo has been sitting in the lamb sauce and grease for hours. Greek orzo doesn't get mushy, but Italian does.
Yes that is true sadly. In my restaurant I kept them separate after cooking. Used the ice method I show to stop cooking and also doesn’t become a big lump. when an order came just warm up with same juices without overcooking. It would always come out perfect 👌

It is a fire terra cotta casserole pot. You can use if you want a regular pot with nothing plastic on it and put it instead in the oven or a deep pan which you will cover with foil to maintain the moisture..Thank you guys for all your love I hope you enjoy the food with your loved ones :)

Kosta I wish I could make more it is my great passion! Thank you so much this means a lot...maybe one day I will be able to teach the world Greek cuisine its simplicity and divine effects on people's hearts! I really want everyone to know of the unique products Greece cultivates and offers and I know if we could teach and export Greece will also bounce back faster.
Also i would like to thank you for your efforts to teaching people the real recipes and not this thinks that they serve in some restaurants and they call it Greek food

You can boil the orzo separately , rinse it with cold water to get rid of the starch , then add it to lamb. It will take away all the stickiness and clumping !

instead of put ice at the end try to stir-fry the orzo in a big pan before you ad it in your sauce with a little garlic and a lot of onion .for this recipe try to not use olive oil just some gee butter , you will see a lot of different aromas raise up

Mori Why you add a water.?
Hi Arsen, I'm not sure I understand your question. Water is added to cook the orzo and meat. If you mean ice, it is because it stops the orzo from overcooking and becoming lumpy. I suggest you give it a try. I also wanted to let you know that "Mori" is a rude word towards women, given your other positive comment, I assume you wanted to say something nice so, "Koukla" means a doll, and that would be more fit to use.
