It's not even the most valueable lightsaber either tho. Jacen Solo used a perfect quality Corusca gem, which according to Lando would be worth at least as much as an entire Coruscant city block.

Um this still doesn’t explain why rainbow gems are more rare. All crystals and gems take thousands if not millions of years to develop through natural physical processes, so how exactly is one that can grow in a couple thousand years the most rare?
Likely the food source or environment needed to crate the gems are incredibly expensive to maintain to the point they just don’t grow naturally or in such small quantities as to make Kyber crystals look like stone to diamonds in Minecraft standards. There are several Kyber caves in the galaxy, but I’ve never heard of a rainbow gem cave. These gems could also be more powerful, resulting in fewer defects like the one that cost the princess her arm. Just a few guesses, I’m not an expert on these gems at all. Going with my gut.

The pearls of krayt dragons could also be used as lightsaber crystals. Now, depending on the continuity the reason changes. In Legends, the actual pearl is good enough to be the lightsaber crystal, while in Disney Canon there is a rare chance that the pearl is made of kyber as was shaped into a sphere over centuries. When a lightsaber uses a krayt pearl, it created an unusually powerful blade that emits a howling sound when ignited, which is just badass. Either way, the pearls are also incredibly valuable and could be used to buy calamari cruisers as well, lol. They were also a sign of respect among any in the galaxy, especially Tusken Raiders, because it means you had killed a krayt dragon.
First off, Jacens corusca gem came from the heart of a gas giant and could buy a city block on coruscant. Idk that seems pretty in the running for most expensive crystal, seeing as a block on that planet extends from the crust and below to above the clouds.
This is literally an in-universe example of an MMO cosmetic item. Unique-looking? Yes. Hideously expensive? Yes. Functionally the same as a regular item? Also yes.
