    So I'm not a good cook, my husband does all the cooking. I treated myself with Ninja foodi for Mother's Day. I've been watching your Chanel and made couple of appetizers. All came out delicious. However this is The Best meal I've ever made for my family.

    Made this for dinner tonight and served it over rice. My husband loved it! I'm a celiac vegetarian but I LOVE to cook for my husband. This makes reliably good recipes SO important because i cant taste and tweak. Your recipes are always winners. I was skeptical about how easily this would shred. You were right, of course. Bringing some to work for my coworkers to try.

    I have to admit that I use this shredded chicken process for lots of things. I've been following you for about a year (since getting a Ninja Foodie last Christmas. I use this recipe for making grandma's chicken and dumplings ( change out the veggies for a classic chicken and dumpling), it works perfect. (at the end of the 10 minute natural release, I finish the release and shred the chicken in the pot. I then just add the dumplings and cook on sear/sauté for another 15 minutes, till dumplings are done. The carrots, celery, and onions stay in for my recipe. ( cheesecloth the whole allspice, cloves, bayleaf, etc and remove before adding dumplings.) ) Anyway, thanks for such a versatile recipe Louise. Your the best out there!

    Wow!! This is delicious! The broth is so delicious I definitely have to eat it as a soup! The salt is perfect!the cilantro added a nice balance and flavor I added some maple syrup on a whim👍

    I made this for our Wednesday night church group and the majority of the people wanted the Mexican Shredded Chicken over the plain chicken cooked in chicken broth. We had a taco buffet. I was surprised of the outcome! Your recipe was delicious!! I used a can of Rotel tomatoes instead of the fire roasted tomatoes. Now do you have a recipe for the soup or another dish that I can use the soup stock that I cooked the chicken in? You are a sweetie to help us cook up great meals in the Ninja Foodi!

    The brand must make the difference. Mine were not Hunt’s. Possibly were Muir Glen. I agree on cr ge R-TRL mild being somewhat Spicey but not even close to the fire roasted I had used. Thank you for your replies. I will definitely be reading more closely , the details on any fire roasted tomatoes Before adding to a recipe. This chicken will work for so many things! I am feeling more acclimated to using my Ninja Foodie thanks to your videos. 🌸✅

    Great video, love your recipes and presentation. (My wife cringes at recipes with lots of garlic or hot pepper, so I always cut those down. The beauty of your recipes. They're so easy to customize! This one I cringed at that pile of cilantro. LoL I'm one who tastes soap when eating it.) And Jeff does so well with the music. That really sets your videos off.

      Thank you so much! Jeff is not a huge fan of cilantro, but it isn't as bad as the soap taste that some people get. Isn't that so odd? To me, cilantro has a wonderful taste and not like soap at all. Pickled ginger that you get with sushi tastes like soap to me, but I love ginger and I even like it when I pickle it. I wonder what they do to it? LOL

      @@TheSaltedPepper -- Here's what I did. I used some of the chicken to make chicken enchilada's. The rest of the chicken and the broth, I added a can of corn (drained) and a can of black beans (also drained). I had about a cup of chicken broth left so I dumped that in too. It makes a really awesome "chili" or soup or whatever you want to call it. Top each bowl with crushed corn chips when you serve. It is seriously good.

      Yes, absolutely, but you would need to either cut the pork up into small chunks or cook longer to get the right consistency.

    I opened up a can of the fire roasted tomatoes recently thinking they were only going to be since fire roasted, but they were Spicey HOT! It ruined my recipe so I learned from that to use only a few in the future. I wonder if we are dealing with brand differences, where one is spicey and the other brand not?? I honestly TRY to add a bit of heat so we can get used to it, but the fire roasted tomatoes were Spicey like the hot style of RoTel ( there are green chili’s and such in that). We use Ro-TEL mild , not original.

      I have never had a can of fire roasted tomatoes that are spicy. Never. It must be something different about the ones you purchased. Ro-Tel mild are WAY more spicy that the fire roasted tomatoes I get. I use the Hunt's brand. Just plain fire roasted tomatoes. Try them, they are wonderful!

      Yes, but you would want to cut the pork shoulder up into chunks or increase the PC time.

    Hey Louise, Do you think I could do this with all Chicken Broth instead of the Tomatoes? I’m crazy about Tomatoes but my Husband is Not Always a Fan . Since I made the chili last night, I might try to do this without the fire roasted tomatoes 🍅🤔 he can be such a baby sometimes, lol - But I’m 100% using the Cilantro ( he’s not a fan of Cilantro too) I’m cooking 3 times a Day seems like during these Stay at Home New Normal, xoxo

      The knife I use the most is from Pampered Chef: www.pamperedchef.com/pws/thesaltedpepper/shop/Kitchen+Tools/Cutlery/8%22+Chef%27s+Knife/1575 I also have the Ninja knives, but I like the feel of the PC one a little better. I've only had the Ninja set for a short time so I can't speak to how they hold up, but I've had my PC chef's knife for 4-5 years and it's just like new. I do sharpen it every few months.

    A great way to shred chicken is to use your hand mixer. It works like a charm, especially if the chicken is warm.

    Some people actually have a gene that does not let them tolerate cilantro. My husband cannot even tolarate the smell of cilantro. So that will never be in our recipe. Everything else will be fine. Can't wait to try it.

      Yes, same time. Unless they are frozen in a block and then I would add 5-10 minutes.

      I've had mine almost a year and use it every day and sometimes several times a day. No problems so far. You can use it to reheat, too. It's amazing!!

    I can think of a bazillion uses and wish I had some shredded Mexican chicken in front of me niw ( less tge fire roasted tomatoes bcthose ARE very Spicey) I few would be ok but not a whole can , and no jalepeños). This would be good in a P.O.’ boy sandwich too! 👍🏼

      Fire roasted tomatoes are NOT spicy, please try them and you will see. There is not one bit of spice in there, they are simply roasted over a fire which makes them sweet. They make a world of difference in any dish calling for canned diced tomatoes. Now, the rotel diced tomatoes can be spicy.

    Can i skip the pressure cooking and just slow cook it for 6-8 hours?

      Yes, that should work fine. Just keep an eye on the liquid amount because there is more evaporation with slow cooking then pressure cooking. If my memory serves me correctly, there is enough liquid in this recipe to work fine in a slow cooker.

    Question, my husband, if he sees tomato pieces or onion pieces in anything I cook he turns hi nose up. He is okay with tomato sauce or tomato paste. Could I use my food processor & process the tomatoe & onion in this recipe?

      The only problem with that is if the sauce is too thick to build the pressure. I'm pretty sure the onion would be fine, but I'm not sure if the tomatoes would work. You can always leave them out for the entire recipe. That's probably what I would do.

      You can fire roast your own tomatoes or just use plain diced tomatoes.

      I love using thighs! I have found that the chicken breasts in the grocery stores really vary. I've made this same recipe and it's been melt in your mouth tender and another time a little chewy like you said.

    So sorry, but I can’t eat cilantro or parsley. I just omit both. Works out fine. My mother-in-law who is 95 says it you cook with ingredients you like, recipes can never go wrong!!!
