Sure, if they do it's better but it's more expensive and harder to manage. Also that pizza crust is not thin at all, and is perfectly cooked in my opinion. Not uncooked and not burned, spot on. That leaves the crust flexible, it's normal

That’s not necessarily true. Some of us Italians like dipping our pizza crusts in spicy oil if it’s available at the restaurant. Sometimes they’ll even ask you if you want it before you start eating. You guys romanticize us too much, and make us all look like idiots.
