Professionals use vanilla extract because of its concentrated vanilla flavor. using actual vanilla bean 9/10 times won't get you the desired flavor strength you need. A nice happy medium is vanilla bean paste since a lot of the extracts aren't good quality and that's why they get a bad rep. These donuts are also the same thing as beignets in other parts of the world :] so if you like beignets you'll like these.
It is great that it seems there is enough time to make everything in a calm, friendly environment. That was exactly the opposite of my experience in Paris in a similar industry, where I had loads to make in literary a few seconds for each item.
