I didn‘t understand the pasteurisation - why would mixing in the sugar pasteurize the egg yolk? don‘t you have to heat the yolk up to 58 degree Celsius for some time to take effect?
It's not pasteurization, but you kill germs and denature proteins when you add this much sugar to the yolk.
