I have been hunting for about 2 years and the only ones I really got excited for were the ones I found unintentionally.

Yeah when you are actually go out looking for shinys you are expecting to get it.
I only really got excited when I randomly encountered a shiny klefki, and more recently a rockruff 2 hours whithin playing moon, I wanted a boy and instead I got a blue girl.
If someone says "lets go" it's more or less click bait. If its just a gasp or a true look of pure joy, then it's real.
I don't think anyone has genuine reactions as over-the-top as these. I find a Shiny and I'm just like, "yay". Other than that, great montage.

Rule number two: Don't knock out or run from a Pokémon until you know whether it's Shiny.
Rule number four. Always use super effective moves that have high crit chance against shiny.

What's your advice for finding the will to farm for shinies when you don't have a Twitch chat full of supportive fans to cheer you on and talk to you? I tried to find Crabrawler, and I got bored after about 4 encounters. How am I going to sit and chain over 100?!

LL64 I could do that, but I still need to beat the game! Personally, my first priority is to finish the story and get started breeding for Battle Spot. By that time, I may as well use the Masuda Method, but I will likely feel like I have more time to spend on SOS roulette.
If you dont enjoy shiny hunting then dont bother. Its not something you need to do.
Paul That Guy I probably won't, but godspeed to those willing! I've bred a few shinies using Masuda's Method, but it's rare that I get a make from another region with enough IVs to actually breed for more than looks. Once I get access to my collection with Pokebank, I should have a Shiny Charm in no time!
