Ingredients
2 liters of milk
1 cup of sugar
1¼ tbsp lemon juice (adjust as needed)
7-8 tbsp ghee (divided)
¼ tsp cardamom powder
Pistachios, chopped (for garnish)
Equipment
Well-seasoned stainless steel or non-stick pan
Greased tray or pan for setting the cake
Instructions
Prepare the Pan: Start by placing your well-seasoned stainless steel or non-stick pan on medium heat.
Add Milk and Sugar: Pour 2 liters of milk into the pan, add 1 cup of sugar, and stir well. Bring the mixture to a boil.
Curdle the Milk: Once the milk starts boiling, sprinkle 1¼ tbsp of lemon juice over the milk. Do this from a height to distribute evenly. The milk will start to curdle slightly; don't worry, as it shouldn’t separate completely.
Add Ghee: Incorporate 2 tbsp of ghee into the mixture. Keep stirring continuously to avoid any burning at the bottom. Keep the heat high, as this process may take up to 1 hour.
Thicken the Mixture: As the milk thickens, use a lid to minimize splattering. Continue to cook until the mixture thickens and reduces significantly.
Change of Color: When you notice the mixture changing color to a deeper hue, it's time to add the cardamom powder and the remaining 5-6 tbsp of ghee. This will enhance the flavor and add a rich texture.
Set the Cake: Once fully cooked, turn off the heat and carefully pour the mixture into a greased pan. Spread it evenly.
Cool and Set: Allow the milk cake to set at room temperature for about 4-5 hours. Do not disturb it during this time.
Garnish and Serve: Once set, sprinkle chopped pistachios over the top for a crunchy, nutty garnish. Slice and serve the milk cake to enjoy its creamy and rich flavor.
