24 ounces chuck roast 1 can red enchilada sauce oregano cumin chili powder garlic salt two or three tomatoes 1 1/2 onion lots of garlic optional: 3 guajillo peppers(you can remove the seeds if you want optional:2 ish chicken buillon cubes fat free mozzarella your favorite tortilla Cut beef into chunks, add everything to a slow cooker, cook on low for 8 hours When done cooking, drain liquid, set liquid aside, put beef back in slow cooker, or a bowl and shred it take out all cooked veggies and peppers, as well as the liquid and blend it to make something similar to a consume. To assemble quesadillas, take a tortilla, put the cheese, meat, diced white onions, cilantro, more fat free cheese, then fold and cook until your desired color on the tortilla.
I think calling these quesabirria is a bit disingenous because of the lack of ox tail and a true consomme but this looks awesome. A lot of tortillas i see though have calorie counts that are way past my threshhold. Is a majority of the calorie count here in the tortillas and cheese?
true consume would take away from the macros and ox tail isnt used in many birria especially now, even in Michelin recommended restaurants like Birrieria y Taqueria Cortez they use beef
@lightningdragon7361 I understand it a bit more now, but I think the red sauce is also a bit much in the macros too, so I don't think it's that much, I suppose it's easier, And I was just confused cause the taqueros around here in south Texas swear on ox meat for birria
