- Buonasera, for a while now you've been asking me to make a video about how I budget, the types of healthy meals I cook and how I find time to do everything so I thought I'd make a different type of cooking episode this week and invite you into my Tuscan kitchen in real time to see exactly how I prepare a gourmet healthy dinner for two on a budget. I love seeing your photography work while making videos and have been wanting to ask you to talk about your equipment and techniques/tips to better video and photography. Whenever I visited my two aunts in Calabria they would fry up some potatoes in olive oil. Good Calabrian potatoes they would say. I love pan cooked potatoes. In fact I made some today for lunch. They were delicious but still not as good as my aunts. Must be the love they put into cooking them for me. Such sweet ladies. Very much enjoyed the cooking show. And, as if he doesn't already know, remind Guido he's a luck man.
Hello! I enjoy your videos immensely. It is so heartwarming to see two people who are so in love and truly care for each other. I have been married to my husband for 36 wonderful years and I hope we are blessed with many, many more. The love I have for him grows with each passing year. I made this with a tweak tonight, used fresh buttered Jersey royal new potatoes instead of roasted potatoes. What a sublime dish, made Aioli with garlic as adore it, hubby was my oil pourer. I got home from work at 6.15, we were eating it at 7.15, truly delicious used yellow courgettes. Thank you for the recipe. X

Kylie! To begin with, the care and attention you bring to everything you do is so inspiring. I love Italy. The first time I went years and years ago, we stopped in a wee village and went to a trattoria where you had the meal they were making at the time as they do. It was pretty much the meal you made in this video …well, without the beautiful surroundings of your home. Which brings me to another point. Watching you cook in the warm and inviting kitchen which we saw you decorating made me want to redecorate my own kitchen. The atmosphere helps to infuse the meal you are cooking. Your audience can almost smell what Guido ultimately did as he came through the door. (Side note: not only is he the loveliest fellow but he is also such a good sport. He always steps up to the mark when you are filming.) And finally, the food. A friend used to say KISS: keep it simple, stupid! So without going through Machiavellian gourmet cheffy hoops, you made a most scrumptious and beautifully presented meal WHILE PROVIDING A COOKING LESSON, for crying out loud. The scenes during which you reveal where you got the farm fresh ingredients were fun. Oh, dear. I am going on.
At any rate, any of those suggestions you made while spinning eighteen plates in the air would be super. Vegetarian, vegan, maybe something that traditionally seems to be scary and complicated but that can be broken down into relatively easy steps for the daunted cook at your skilled hand … . Really like your content. I am by reputation the “chicken queen”. Never a dry awful chicken. I was taught when I was just 8 years old by a world renowned chef from the 60’s who was a friend of my aunt and uncle. He taught me how to chose good quality cuts and how to cook said cuts so one appreciated the sacrifice a beast or fowl had made to sustain us. He described cooking food as a sensual experience savouring every aspect of food relating to all ones senses. He truely made cooking an ethereal experience. I must add there was nothing inappropriate or weird about our relationship he just saw me and my creative side and passion for food and decided to pass on some of his immense talent, as a gift to a funny little awkward child that he saw something in. One of those times in life that is ever changing and forever appreciated.

I too love seeing you cook in the kitchen you made over. What a joy it must be to see it all from behind the camera. Truly you create art. I don't know if you do any jams or pickling, but it would be interesting to see the Italian angle of these. Anything you make comes out charming and makes me hungry. Also take us shopping with you if you go thrift/ charity shopping again. Such fun to see you acquire a piece(s) and then transform them.

Hi Kylie I often watch your beautifully presented videos and enjoyed the Chicken Zuchini and pan roasted potatoes. The aioli looked perfect and as I’m a 75 year old lady who has always loved cooking and baking I wanted to share a little tip about cream based sauces and aioli and home made mayonaise, if they split just add a teaspoon of cold water and continue to whisk and it will come back to a fine sauce. When we first 'met' Guido he seemed quite serious. Now of course we know that he has a happy and fun side to his personality too.
Perhaps you could make corn bread (rather than polenta)? It would be worthwhile spending the time in the kitchen (also making extra to freeze), as it is quite expensive to buy in inner city bakeries.
