I think it depends on the stories you want to tell. The first person works well to make a connection with the reader. If you mostly want to communicate in the first person you can also consider to post on your personal profile instead of the company page.

There is currently no way to manually adjust the date of a post on LinkedIn.

There is no actual limit on the number of people you can tag, beyond the maximum character length (~1300) of a LinkedIn Post. However the best practice says to only mention people who are directly relevant to the post. Don’t use post tags with the intent of driving views.
