To play GTA5 at 100% you have a HUGE amount of very variable side missions. There is nothing to be added to the story mode and you got lots of DLCs for the online mode.
My favorite one is probably Burial just because of how out of place it feels in GTA V: there's almost no mob element in LS, the oversharing by Antonia, how Trevor actually seems surprised for once (her interaction with Franklin is pretty funny too).

If I remember correctly, the events with the Duke O' Death and the seaplane are only available to returning players on PS4/XBOX ONE players. Also, in that cove where you steal the plane, if you dive underwater, you can find a grenade launcher...at least it is there in the PS3 version. I'm not sure about the next-gen versions...I did notice that some of the weapon pickups change between the PS3/4 versions. For instance, there's a plane crash site just N/NW of the docks where you can find a bunch of goodies, one of which is another grenade launcher, but the weapon changes...on the PS3 it is a grenade launcher, but on the PS4 it changes to a shotgun. Also, these pickups are only available in story mode.
