Trying Adam Ragusea Pan Pizza

  • I’m following a simple pan pizza recipe by Adam Ragusea. His pizza recipe reveals a delicious balance in taste with a crispy bottom. This recipe makes 1 pan pizza, about 10 inches in diameter. I recommend changing the resolution to 4k for a better viewing experience. :)

    Ingredients:
    1 cup (120g) flour
    1/2 teaspoon (3g) salt
    1/2 teaspoon (2-3g) sugar
    1/2 teaspoon (1-2g) dried yeast
    1/4 teaspoon (1g) garlic powder
    2 teaspoons (10mL) olive oil
    1/2 cup (120mL) milk/water
    1/3 cup (80mL) tomato sauce
    sugar, oregano, basil, marjoram, chili flakes, etc
    a dab of olive oil
    5-6 oz (140-170g) grated mozzarella
    one garlic clove
    2-3 shavings of lemon zest - try to not get any white part
    a little bunch of fresh parsley

    Next time maybe consider pouring the extra olive oil into the pan, this way the pizza bottom will be more crunchy :)

      Thanks for the tip! I just didn't want the bottom to be too greasy.

    I've made this pizza at least like 10x now. I'd advise being a little braver with how long you brown the cheese; when the color comes in, that's when the magic happens

    Really good video! Just be careful with what appears to be a non-stick under the broiler. It can make the polymer base vaporize and that’s very toxic

      if there’s food in it, the sides aren’t receiving nearly enough direct radiant heat to produce those fumes. ragusea did a whole video on it, actually

    Broiler should've been hotter and pan placed closer to broiler. Love it tho. Also next time use whole crushed tomatoes
