I think I'd prefer the green one better bec the pulp is thicker & really sweet if picked when you can smell from the outside. This variety the pulp seems thinner its just that the red skin is so attractive & I've never seen it fried before. The seeds can be boiled & tastes almost like chestnuts. The green unripe one can be cooked as a dish especially wt coconut milk it's so delicious. Personally i like to eat it freshly picked from the pod provided it's the exact ripeness or it will be less sweeter.

HAVE you seen Jack fruits with normal green exterior but inside edible segments in light or Dark pink/ Red? They are real.Even some fruits are very light yellow when ripe and others very dark yellow..
