these basic simple chocolate decorations really are one of the first things you are taught to do after tempering chocolate in culinary school. it's easier to put the chocolate between 2 sheets of acetate instead of flipping it. and you could also use saturated solution sugar syrup instead of alcohol although the alcohol evaporates quicker.

You could use ruby yes , acetate is used for the shine and thickness . You could try with parchment paper , however , you won’t have the shine
