I'm guessing, he doesn't believe in talismans of sort, so he put the coin back to her pocket. In the end, she realized he put the coin to her pocket because she's the one believing in the luck that the coin can bring. But now that she felt like she's lucky enough to have him, she threw away the coin, thinking that it wasn't luck or fate that brought them together but love.
Perhaps she wished to pay it forward and share the gift of luck/love, that another person might also have a bright day and find a lucky coin, and some joy.
