What is the actual time per serving. The process looks slow getting to the final point cutting and getting the noodles. It looked like without the proofing stage it took 30 minutes to make around 20 servings.is that correct?

This machine can make up to around 150 servings per hour from scratch (this does not consider the time it takes for resting (after mixing). And, the performance expressed in # of servings it makes can be tricky as the serving size varies from noodle type to noodle business. 150 servings / hour is based on 120g/serving size.
