Fun fact: overheating milk actually breaks down the sugars in milk and changes the flavor (makes it taste papery). And yes, I know the drink in the video doesn’t have milk.
I do order it "extra hot" if it's for my wife when I am picking it up to-go to bring it home for her. She drinks sugared-up lattes with 1 shot so it's not like she's a connoisseur, but still doesn't like to drink lukewarm. And many places underheat their milk for instant drinkability and quasi-liability concerns.
Part of the reason people ask for extra hot is so they can still drink it after travelling to their destination. But there's a different kind of people that want it extra hot because they assume it's better, even though it's technically worse and they have to wait for it to cool down before drinking.
I would have thought that would just mean less foam (like people say dry cappuccino for more foam). It’s still ridiculous to say. Just say more or less foam.

The hottest coffee I was ever served was Turkish coffee. It was undrinkably hot for like 20 minutes.

Small volume of hot liquid going into a cold cup with significant thermal mass….. it isn’t THAT irrational.
