Absolutely! Form all of the gnocchi, place them on a cookie/baking sheet, and lay it flat in the freezer for 30 minutes until they're frozen through. Then you can transfer them to a ziplock bag and use them as needed! Do NOT defrost them, go directly from the freezer to the boiling water when you're ready to cook!
While I've never done it that way I'm pretty sure you can omit the egg. You may need to use a little less flour since you'll have less liquid overall, but definitely give it a shot!
