This recipe plays out perfectly for someone who grew up with strong old-world immigrant cooking. For the most part you can just eyeball everything since most of the flavor is coming from the raw ingredients. I have heritage from the Iberian Region though so I prefer different flavors. I substituted the rosemary and thyme with sazon and added linguica sausages with the Italian along with onions, potatoes, garlic, pickled red peppers and bacon. Ah, so delicious. For those who needed exacts, his food looked more charred than mine so I'm assuming he was baking at 375-400 F. I was sitting comfortably at 350 with about 15 minutes covered and 10-15 more minutes uncovered.

what is the temperature of the oven when your cooking it. For how long did you cook it for. You said 20 minutes but did you keep it in longer and was it covered the entire time. thanks. Looks amazing!
Wow, ran into this video after looking for different ways to do sausage and it was so easy to make, my husband and my dad loved it few weeks ago. Made again today at my husband’s plea. So good, so delicious. Thank you so much!
I saute my sausage until brown on sides , par cooked, while cooking sausage, I microwave my potatoes till a little under done, cut in pieces, take out sausage. Add olive oil and dried oregano, basil and either whole garlic cloves if I have them or dried garlic powder if I don’t. Add potatoes, salt and pepper to taste then saute until they are semi browned (I like cooking them in whatever juices the sausage releases. Take them out. A little more olive oil and throw in peppers. Add more seasoning to those. Same as above. While peppers cook I cut the sausage into pieces. Approximately 3 to 4 pieces per. Add to potatoes. When peppers are slightly browned throw them into pan with sausage and potatoes. Then I fry my onions in the saute pan with salt and pepper until a little browned. Add to pan. Then I take a dry white wine about a cup and a half and reduce it by half in the saute pan scraping up any bits of flavor and spices. Add to roasting pan and stir all to combine. Bake until done. I do 350 for 30-40 minutes ish. I stir all half way through. Mangia!
At 11:14 you can see him removing the potatoes from boiling water. Presumably the potatoes are cooked until they're almost tender. (They finish cooking in the oven.)
@ Cana box Why? If he wants the oil to have garlic flavor, putting garlic first isn't totally wrong. If you think garlic can get the ingredients burnt more easily, then don't cook it for too long & adjust the heat accordingly.
He doesn't seem Italian to me, and he is not a very good speaker. I want to know if you can make it really good by cooking everything together in a pan.
Finally I found someone who cooks just like me. Everything I ate at my Italian nani and has been past down to me. Looking forward to new recipes 😊

Some advice. The best recipe videos are 5 minutes or less. Nobody needs to spend 10 minutes watching you chop ingredients.

Put a wet paper towel near you when cutting onions will osorbe the smell and won't burn your eyes....
