    Life Prepared: I so feel your pain about having something else take your attention for a while and coming back to find some thing over done. Sigh. Such is the nature of life, so I’ve started putting a timer on my food-processing appliances when I think there’s a chance that I might get called away. Just those little timers that are intended for turning on your lamps when you’re away on vacation do a great job, and more than once they’ve most likely saved me from over cooking something or even burning down the house.

      The taste is very similar but they can have a slightly rubbery texture. The problem for me is that I cannot turn them into a powder. They have a "BB" like size as one viewer stated. This is not a problem if you do not want to bake with them. For baking, I start with the eggs raw then dehydrate.

    I tried to find answers in the comments but decided to just post my questions. Q#1: How exactly do I use these in baking? Do I re-hydrate the powder with water and then add that to the mixture? Or just put the egg powder in with the dry ingredients? Q #2: Is this just for flavor in baking or does it actually bind like a raw/fresh egg would? Q #3: You mentioned in the video that you can also 'powderize' the dehydrated pre-cooked scrambled egg and use that in baking. Is there any downside to that? It seems a LOT easier than powderizing the raw egg. Thanks so much for the helpful video.

    • @LifePrepared
      @LifePrepared  2 года назад +2

      I use it as a powder in baking but you need to add 2 T of liquid per egg. It is easier to dehydrated lightly pre cooked eggs so it depends on your preference. Both work the same as any other egg in baking. Hth.

    How do you reconstitute them for baking or for scrambled eggs

    • @LifePrepared

      I first like to use them as a powder so I buzz them in my majic bullet. To use in baking, I add 1 tablespoon for each egg to the dry stuff. I add an additional 2tablespoons liquid per egg to the wet ingredients OR add 2 T warm water per T off egg and let it sit until reconstituted. I do not like to use them for scrambled eggs alone. For that, I freeze them.

      I haven't tried it but it should work fine. The yolks have a lot of fat which can cause issues in drying that the whites should not. If you try, please let me know how it goes.

    I have some questions. When you dehydrate your raw eggs, do they feel oily? I first tried in my dehydrator in a silicone cake pan. At 30 hours they still did not seem dry and I gave up. A failure. Next I tried putting them on my best cookie sheet in the oven and at 10 hours they seemed dry and smelled burnt. It took me HOURS to try to remove them from the cookie sheet. Yuck! Another failure. Your trick of Stirring the eggs during drying was mew to me and I plan to give it another try.
    The other questions are, when you scramble your eggs first, do you salt. pepper and butter them during the scrambling? And, how do you rehydrate and heat them up for a scrambled egg meal?
    I have six young hens that are laying like crazy. I've learned how to pickle, ferment, freeze and water glass, but have been most interested in making eggs powder to bake with in the winter.
    Thank you for such an informative video! How did your over cooked powder work in baking?

    • @LifePrepared
      @LifePrepared  3 года назад +1

      I do not add anything to the eggs before dehydrating. The pre cooked eggs, I find it necessary to add very warm water and let sit about 10 minutes. I much prefer to use the eggs in either method for baking or in casseroles because they taste "fake" to me once reconstituted. The over cooked ones were used in baking with no noticable difference. For breakfast scrambled eggs, I prefer to freeze them.
      Stirring frequently works best to prevent sticking. I also picked up a new paint scraper that helps if they stick because the blade is thin and flexible. HTH.

      @@LifePrepared When I tried the dehydrator it was set at only 140 degrees and took 30 hours. After your warning of salmonella I can increase the temp for sure. I think increasing the temp, Stirring the eggs this time and not filling the cake pan as full is worth a try. I sure won't put them in the oven again. The lowest temp I have on it is 170 degrees. The smell of burned eggs is sort of like burning hair! Funny you mentioned a paint scraper because that is what I had to use on my cookie sheet to get those eggs off! What a time consuming mess! I haven't made cookies since I had the baked on eggs. Cookies may never be the same on that sheet again! :(
