Bringing Food Back From The Dead | Struggle Meals

  • STOP - don't throw that out! Frankie is creating a religious experience in the kitchen by bringing food back from the dead, all while saving you cha-ching.
    ------
    French Toast Casserole-
    Ingredients
    Leftover bread
    4 eggs
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    2 tablespoons granulated sugar
    1 cup whole milk
    1 teaspoon vanilla extract
    2 soft apples, cubed
    1/4 cup pecans, chopped
    2 tablespoons butter
    Steps
    In a large mixing bowl, tear up leftover bread into 1-inch cubes.
    In a separate mixing bowl, whisk together eggs, cinnamon, nutmeg, sugar, milk and vanilla extract. Add bread and apples and toss until coated. Mix in pecans.
    Grease a 10-inch cast-iron pan with butter. Add bread mixture, cover with foil and refrigerate overnight.
    Preheat oven to 400 degrees. Place casserole in oven and bake for 30 minutes or until bubbling and brown.

    Chicken Stock & Chicken Noodle Soup-
    Ingredients
    Stock:
    2 medium carrots, coarsely chopped
    2 medium celery stalks, coarsely chopped
    1 medium yellow onion, skin on, halved
    1/2 bunch parsley
    1/2 teaspoon whole black peppercorns
    1 roasted chicken carcass
    3 quarts water
    Salt
    Soup:
    2 tablespoons olive oil
    2 medium carrots, peeled and small dice
    2 medium celery stalks, small dice
    1 small yellow onion, small dice
    1 teaspoon kosher salt
    2 cups shredded chicken meat
    Chicken stock
    1 cup dried pasta
    Steps
    For the stock: In a large stock pot, add carrots, celery, onions, parsley and peppercorns. Break up the chicken carcass into several smaller pieces and add to pot. Add water and bring to a simmer. Cook for 1 1/2 hours.
    Remove veggies and chicken pieces, and strain stock through a sieve or paper towel. Salt to taste. Allow to cool completely, then store in fridge for up to 3 days or in freezer for up to 1 month.
    For the soup: In a large stock pot, add oil. When hot, add carrots, onion and celery. Add salt to taste. Saute for 5 to 7 minutes. Add chicken breast and stir. Add the stock and pasta. Bring to a boil and cook for 7 to 8 minutes until pasta is cooked through.

    Banana Mug Bread-
    Ingredients
    1 tablespoon butter
    2 teaspoons milk
    1 large egg
    1 ripe banana, mashed
    1 teaspoon sugar
    1/2 teaspoon baking powder
    2 tablespoons semisweet chocolate chips
    1 tablespoon chopped nuts
    Steps
    In a large mug, melt the butter in the microwave for 10 seconds. Add the milk, egg and mashed banana. Stir until combined. Add in sugar, baking powder, chocolate chips and nuts. Stir until fully mixed.
    Microwave for 1 to 2 minutes on high (time will depend on how your microwave cooks). Remove and let sit for 20 seconds before eating.

    A note on the chicken soup: cook the pasta separate so that the noodles don't absorb too much broth. This way, you can freeze the soup for a sick or rainy day and still have al dente noodles in your delicious, home cooked soup.

      Yes cooking a red onion for a long time will take the color from the red onion. But I personally saw a white onion, in the soup stock. Looked like a Vadalia onion or Spanish onion.

      That's because coffee doesn't actually give you energy, it just stops you from being tired. Speaking as someone who's worked at coffee shops for years and regularly has 4-shot drinks.

    That energy alone bring you back from the dead XD I often forget that I could make veggie stock with old carrots and celery, maybe I can freeze the stock into an icecube tray to use as a base for sauces too ?

      Mélissandre L. Yes!!! Definitely a great idea! I like to chop and freeze fresh garlic that's about to get too soft and jusy pop one clove into whatever you're cooking. Freezers are so underutilized. Lol

      Some times I just make a lot and when I strain all the solids I let the liquid cook down to about a third to fourth the amount and you get a concentrated amount and put it in your fridge in a jar for a couple months.

    You do not need a stand mixer for banana bread. You need a spoon and mixing bowl.

    I love struggle meals, I star watching it on facebook sunday morning but now (besides I watched) I’m watching it again because is just fantastic!!!! I can’t believe that it almost doesn’t have as much views as it deserveeeee! Frankie is a miracle and is danm awesome! Lo e tastemade and I should been here long time ago but now i’m here.     Stale bread can be turned into a delicious snack - croutons in under 10 minutes :
    1. slice bread into cubes
    2. rub bread cubes with oil
    3. add spices
    4. bake in oven until golden brown
    5. enjoy

    When meat is a little dry adding water will make it moist. Or, topping it with Gravy, Applesauce or Cranberry Sauce gives it new life.
    A mushy Banana or other fruit can be microwaved into a fruit spread to top Oatmeal, Peanut Butter Toast, Bagel, Ice Cream or Yogurt yum

    You can also freeze bones and make stock whenever you have enough. I generally wait until I fill up a gallon bag.

    I have no problems eating the heels of the bread loaf. I put one in my brown sugar. Also....stuffing came to mind from the bread, celery, onions...even the carrot. I would make stuffing, put in baking dish, top w pork chops or chicken. Bake and voila.

    Can also make french toast in the microwave with the stale bread if there isn't a lot of it. Similar to the casserole but then put the bowl one to two minutes in the microwave instead.

    I so agree. I would have gasped that that half a chicken would have been thrown away! I mean you could make chicken salad or soup or add in a wrap then use the bones for soup. We are far removed from our grandparents that survived the great depression!

      We have it, and we call it bread pudding here :o. I don't know what the video's on about, no one has ever heard of a bread casserole around here. Everyone's heard of bread pudding

    You can make pesto from carrot greens. Cheaper to make and buy. My family puts it over pasta.

      Casey Li The skin has a higher concentration of all the nutrients in the carrot. Potatoes are the same way, you should always try to keep the skin.

    We bring groceries to my nephew's family (his mom and four kids total). My mom has watched their mom root through the groceries and throw out stuff from our pantry right in front of my mom, on account of "it's out of date" or "I don't know when this was packaged."
    Could've wrung her neck. If you're not gonna use it, at least give it back to US! (And we'll buy you new cans of whichever bits from the food bank that you would otherwise throw out -- just trade 'em over!)

    I think I have seen about everything including eggs (egg mixture) cook in on on this show... But no amount of effort can get my cast iron that seasoned.
