  • Beef Rendang
    Blended ingredients
    Onions (White and red)
    Garlic
    Ginger
    Galangal
    Lemongrass
    Chilli paste
    Toasted ingredients
    Cloves
    Cardamom
    Star anise
    Coriander *
    Fennel *
    Cumin*
    All items * finely grind after toasted
    Tenderloin (Batang pinang) marinate with tumeric powder + chilli paste
    Santan / Coconut milk
    Kerisik (dry fried shredded coconut. Pound till discharge oil)
    Kicap manis & kicap masin / Soy sauce
    Gula melaka / gula apong ( Palm sugar)
    Salt & pepper (black)
    Lime leaves (cut half)
    Tumeric leaves finely sliced
    Method
    1. In hot oil, fry the Cloves, cardamom & star anise (just a minute)
    2. Put in blended onions, garlic, ginger, galangal, lemongrass & chilli paste. Fry till oil breaks.
    3. Add soy sauce (sweet & salty) (not too much)
    4. Add in the marinated cut beef and stir
    5. Add in the gula melaka & toasted * ingredients (coriander, fennel & sweet fennel)
    6. Then add in santan. Cook until oil breaks and beef tender
    7. Add in kerisik. Taste first.. and then add in the salt and pepper (kerisik can be salty)
    8. Stir thoroughly until rendang looks shinny. Add in the lime and tumeric leaves in the end.
    All blended ingredients agak2 but onions must be much more than the rest.
