I don't think this game is really meant to be filled with any lore fellas, not in the demo anyways. It's most likely just a straightforward spin-off mainly made for fun, and some homage to other kart racers.
The fact that the "midnight motor' car from midnight motorist has a golden bonnie suit is lore in itself. Basically 'confirms' that midnight motorist is Afton
It's listed as being published by Clickteam (like the other Fanverse Initiative games), instead of by Scottgames like the other official games. I'd say this game is more likely to lean toward "officially-endorsed fangame" than "official entry in the series" and probably not have any lore as a result.
The lore is likely that it's tied to the World games, and is another look into how they're spending what little of an afterlife they have. Tho apparently, someone in this comment chain said the game has the Fazbear LLC. affiliation

Personally I think the game is cheeks, shouldn’t even be a public demo yet, controls way to stiff, bots are worser than cyber punks bots and just cheeks in general
They’re good in the ai department for the most part. I don’t know what problem you’re getting, the only disappointment is how bad they deal with oncoming traffic.
