I'd be terrified to see her driving with others after she said she has 5 hours of driving experience and the last time she drove was 1 year ago, she needs to do it again with a professional, because there's no way in hell she's ready for the road, her awareness of things are just lacking, you need to be focused and confident on the road.

You should buy an old car with a manual gearbox and make her learn that later. I can never see it as being able to drive fully when its an auto. If you take drivers license with an auto in European countries you are not allowed to drive manual.
