Just made it and both my partner and I enjoyed it a lot though cutting through the frozen meat is not easy. Also tried the smoked paprika in the sauce which I think gave it a kick. Not being very good at making bread I used shop-bought Nan which we thought worked well. Anyway thanks for the recipe

If I could go to a restaurant and order it, I would, so I could try it before trying to make it myself. So another wonderful recipe as always! I just have a couple of questions : 1. I would have liked to make 2 variants of meat.. Beef and lamb. Either together or separate. 2. I would add some lamb fat to the meat. I feel that it gives a more authentic flavor after frying. I also want to thank you for showing us the way to get thin slices just like the restaurants in Istanbul. Pure genius on your side! May Allah bless your wonderful family always! In my experience, kebab is better when the meat is a mixture of minced lamb and minced beef. It kind of balances the flavor and lightens the strong mutton flavor. You don't need to add fat to the mixture as long as the ratio is 20-30% fat and 70-80% lean meat. May Allah bless you and your family and Ramadan Mubarak

original restaurant İskender recipe %70-75 beef and %25-30lamb. Onion and black pepper only. No other spices You need to mix the meat thoroughly. Let it rest in refrigerator at 0degree one day, second day if the meat is to hard add little mineral water to soften. Mix it again. Wait another day than ready.

Not so traditional but it's what I do, plus more chilli sauce on the side. After all you already have the yoghurt there to cool you down lol.
