Although is the same ingredients they are not making it the authentic way. The filling should be added before cooking the dough so that when you fry them they don’t open and lose the filling and yes there was not enough filling.

These are not enchiladas! These are taquitos or quesadillas. Enchiladas are the rolled up corn tortillas with filling with the sauce over them that you make in the oven with cheeses.
These are enchiladas POTOSINAS. They are not like the well known enchiladas that you can find all over Mexico. Google: "enchiladas potosinas"
