Yeah I'd argue if it's not deep fried or spun into strands it's not fair food. Literally the only thing you can get my local fair that isn't fried is a hot dog and cotton candy.

Word to the wise: Marinating your gator before cooking it helps avoid overcooking it. If you don't have time to marinate it, consider cooking/frying it on lower heat than you would any other meats. You want a light golden color on the meat or breading. Going darker risks that dry, shoe leather texture

True, gator can also be boiled to make it more tender. I tend to do so before grilling it myself, and I use the grill to add a nice sear to the outside to seal in the flavor.

I worked 2 and a half years in a kitchen that had rossoto dishes. The ammount of times even the sous chef that went to culinary school messed up the rissoto is insane. The dish is not easy.
