And yes, the reason the mantis (along with every other enemy and boss) is so huge is because prior to the events of Let’s Go Jungle, a NGO called ‘Green Leaf’ used a chemical with the healing properties of a species of mushrooms discovered by the scientists to help the flora and fauna recover after being ravaged by war...but this in turn caused the local wildlife to grow in size and become highly aggressive

when the plant died, a bunch of butterflies landed on the shrine. As the shrine was completely drenched in the ooze, it affected the butterflies and made them crazy. One of which was the Giant Monarch that kicks u out the heli. So in some way yes

technically, yes it did. When it fell, it sprayed ooze similar to the ooze in the drums which caused the plants to move.
