I started making the egg version. Then I thought the eggless will probably work the same way, but it didn't. It took me awhile to think how to solve, ended up with this idea. The layers and texture is pretty much there. Thanks for being here Valentina 💖💝

I made the eggless version today. Made the mistake of not covering with cling film and refrigerating it for 3 hours. I think I waited for one hour at room temperature before turning. It tastes DELICIOUS! but structurally it needed that cooling. I'll be making this again.
This looks like Flan. Is that what it'll taste like? If I only wanted to make the sponge that I'd then bake in a sheet pan so I could use as cake layers could I triple the recipe without coming across any issues? Bravo to you Fiona!! I can only imagine how many times you had to tweak the eggless version until you got it right. Now that's dedication to your viewers... 👏
@Xavier No, never had that. Yes, I was subbed to Boone's ch but unsubbed due to the differences in pan sizes, etc that were often used. While Boone is very talented I've never been able to recreate any dessert I've watched. Haven't heard of Cooking Tree ch but I'll give it a look. Thanks for the rec and I'll definitely look at Fiona's playlist for the type of sponge recipe I've been on the hunt for... 👍
Yes you can. I would say 30-35 min at 160C. You you're making the cake layer, do cover your pan with an aluminium foil on the top. Likewise you'll need a water bath like the egg version ☺️

It's a quick dessert which you can make. Just omit the cake layer, the caramel custard is already scrumptious enough. Thanks for being here Dan!
