It would make sense to not use all you strings if, maybe, you had 10 or 9. But if you have 8 strings and you're only using 3, that's just about 60% if your guitar that you're not using.(excluding the number of frets, because that's kinda irrelevant.)
Your remark could've been valid if he really only used 3 treble strings which is wrong. He descends to the lower strings when the music calls for it if you look attentively enough. There is no legal obligation to spend equal amount of time on all the strings. This is music.
