We dug just a few of our Yukon golds last Friday, cooked them up, and I was so proud. My first time growing potatoes. 👍🏻 Even my husband was impressed! 😂 so glad and grateful you all are ok. Hi Megan, I’ve canned sweet potatoes for years . I just peel them and cube , put in jars cold pack with water pressure can for 90 minutes for quarts. And they are fine. Hope yours turn out great

I just found you as i was scrolling through looking for a recipe for yeast rolls. Since the storm i wanted to do bread because the shelf at the store are empty already. I am tickled to death . You have some great recipes and i am about to make my first batch of rolls. For the really big ones, I like to cut them on my French fry cutter and can them like that, with a tiny bit of calcium chloride in the jar and no salt, then pressure can them. Then, to prepare them, I just drain and rinse well, pat dry, dust in seasoned cornstarch, and air fry. Deeeelicious sweet potato fries😋

They look even bigger now that you're cooking them! :) That casserole looks great! I always just make them on the stove with brown sugar and butter, but that looks great! I can alot of potatoes and have found with the sweet, I can them dry for candied yams and in liquid for casserole. The ones in liquid come out real soft and easy to beat. The dry hold together so much better for candied. Sure enjoy watching you

If that sweet potato casserole tasted even half as good as it looked, it must have been extraordinary! I noticed one advantage of boiling the sweet potatoes before peeling and cutting them is they’re much easier to cut! I thought that looked like a fine meal! Those were perfect grill marks on the burgers!
Never canned sweet potatoes before. I dug mine seems like 3 days before you did. I always let mine cure a few weeks to naturally sweeten up before eating usually around Thanksgiving. Have you tried curing before canning or can you tell if it makes any difference? I know baking them there is a world of difference in eating them cured versus eating one fresh. Always good to stay away from dead trees after a lot of rain. One just fell in my back yard woods as I was writing this

Last year was my first year to can sweet potatoes and we love them. This year I hope to can more. I live about an hour and a half from Vardaman Mississippi were they grow tons of sweet potatoes and we can get them fairly cheap fir a case. Last year they were $20 a case.

By me they all go together and if your hungry enough you'll eat them, glad y'all made it out , once you open up the sweet potatoes you canned you can tell us all how they came out , you should of tried caning them in that simple syrup, maybe next time
You can cook them with your other potatoes and mash them makes a beautiful thanksgiving presentation (because the mash potatoes have an tint of orange).

I've only done that once, boiling them first, from that messy kitchen time, I peel, chop, jar and can.
A potato peeler really helps that process go fast!

They will make some good sweet potato pie this winter. I like them without the nutmeg and cinnamon. I like to taste the sweet potato.
