The original way to make corn flakes is to take corn from the cob put between to pieces of cloth or paper roll over them to smash them flat and then bake or fry pat dry let cool and you have the original way to make corn flakes
Love this. Found your channel while trying to work out method(s) to recreate crunchy logs of Fru Grains (my dad’s favourite cereal. I’ve nearly got the taste right but haven’t worked out how to make them into those nuggets of deliciousness yet. After watching the whole video, I’ve done very similarly (albeit with vastly different ingredients) but think I’ve been too impatient and just need to bake gently for longer to evaporate the tiny amount of water left. 🙏🏼🤞🏼🙏🏼

Use wooden spoon to stir pls, u can make fresh hot popcorns, roast peanuts, cashew, its actually dry roasting, but u hv keep checking if ready, else they burn. U can moist the dry nuts salty water n then use sand to roast.

Nice idea. But I think that would just dry them out and harden them, but it wouldn't bake them. Baking is needed not just to harden , but to also change the taste

Your recipe looks good, but, they do NOT press the kernels into flakes. They are crushed by rollers to make corn meal and from there they make a dough which is eventually extruded and cut into flakes. Even the original ones were not made the way you described. They were created by accident after letting a bread dough rest too long.
A great idea, but the mixture is not stable enough to go through a pasta machine so thought a roller might work better. But our minds are definitely on the same page! Thanks for taking the time to comment.
@@FoodTech101 I meant that you still use paper, and roll it through with the paper on. You put a strip of corn paste on the paper, then you fold over the paper so that it overlaps on the middle, this way your paste wont get on to the rollers of the machine.
Down South, ppl have historically eaten "cornbread + milk" as a treat. It's a very thin crispy dry cornbread (not cake style).
This is probably how the original cornflakes were made but then got refined by the industrial era

Off to make mine! Love love it ❤😊
12 grain cereal done like this would be awesome, then you can make cereal bars
Can the baking soda and oil be skipped? I would also want to know if they're used. Thanks for the recipe

you should try using a chopstick instead of a knife. Chopsticks are great for stirring, especially for bread recipes

Hey, man.How long does it keep on a shelf for
If properly dried out and kept in an air-tight container, certainly a few weeks, maybe even months.
The main taste agent on corn flakes is Riboflavin!
Thank you for the idea but please May you help on how can I use riboflavin how to add it when making the cornflakes
@@olivermills7930 I don't know the amount you would use. I'm sure you can find a recipe that shows the proper amount.

corn meal not corn flour right? The corn meal is a little thicker than the flour
What do I do with fresh corn?
just eat it.
What to do about parchment paper sticking to the dough?
Once baked, all the water should be completely evaporated, and the dough should release easily from the paper.
Make sure you use parchment paper not something else.

Really well explained. I tried another recipe yesterday and these flakes did not turn out delicious. So once again...
I've also got a video on how to make bran flakes, that you might also like. It uses a similar method and gives great results.
180ºC or 180ºF?

Hello Iam in Uganda Africa and would like to have a chat with u over the same
Look up the background of Mr Kellogg.
He had some strange ideas about what corn flakes would do.
True. But he was a true food entrepreneur, whose company still bears his name, well over a century later.

Far too much effort. I think I'll stick to your rice crispies😂
That's fair enough
Please stop stirring with a knife!!
Why? A knife does the job and is easy to wipe clean.
