  • Humble mushrooms can beat the original beef version!
    There are two styles of mushroom carpaccio recipe that we have seen: one is thinly sliced fresh mushrooms just dressed on the table with lemon and olive oil, the other is what we did here, marinated in anchovy vinaigrette.
    After an hour or so of marinating, the texture of the mushroom transforms to become amazingly soft and silky. Delicious!
