- possibly the most summery cake ever
recipe:
125g baking spread, 125g golden caster sugar, 2 eggs, 125g self-raising flour, 2 tsp vanilla extract, 2 tbsp milk, 250g strawberries, juice of 1 lemon, 2 tbsp golden caster sugar, 100g mascarpone, 100g double cream
1- cream together the baking spread and sugar until light and fluffy.
2- alternate between adding one egg and one tbsp milk, mixing well between each to prevent the batter splitting.
3- add in the vanilla extract and mix until combined.
4- sieve in the flour and fold in gently.
5- pour into a lined / greased 6 inch tin and bake for 30 - 35 minutes (or until a skewer inserted into the middle comes out clean).
6- leave to cool in the tin for 20 minutes before turning onto a rack and cooling completely.
7- cut the strawberries into quarters and put in a pan with 1 tbsp of the sugar and lemon juice.
8- cook gently until the strawberries are tender. remove the strawberries and put them on a plate.
9- return the syrup to a medium heat and reduce until thickened, about 3-5 minutes.
10- put the strawberries back in the syrup and cool.
11- in a large bowl whisk together the sugar and mascarpone until smooth.
12- add the cream and whisk until it just forms soft peaks.
