You should really look into various types of Indian recipes involving lentils and legumes. There are countless variations of them but I'd recommend starting off with the cornerstones: Sambar, Dal Tadka, and a mix dal containing seasonal vegetables. Oh and if you can get your hands on some good Basmati rice (or any ol plain Indian rice) please try Rajma Chawal (Spiced Indian Kidney Beans with Ghee laced Cumin rice--it's godsend. Also great over here on the meat eating side.We like to add lard and bacon to those basics. Sometimes ghee instead of lard and smoked peppers instead of bacon. Classic Viennese thing: lentils with bacon, which can be replaced with fried little tofu cubes and smoked peppers 🌶 Plus bread dumplings.
I feel like becoming vegan kinda forces you to actually think about the food you eat and thereby improves your cooking, at least in my experience (also not eating dead animals is kinda neat too)
Voosh doesn't recommend enough spices for me. Get you some adobo paste, make sure you mix it with oil (veg oil works best). It's so good with earthy flavors.

I think its important to be able to judge the system and the people that uphold it but be understanding of the choices these prisoners make and making them better, instead of taking them away for moral reasons. The US prison system shouldnt use slave labour, but because 80% of voters dont give a fuck about that, lets make sure, these kinds of programs are as good as they can be.

I'm fine with the prison work programs, but being paid $125/month is criminal. If they do a job, they deserve the pay of that job.
