    Best cooking and review show EVER. ATK is a can't cook, can't learn to cook, can't buy anything to cook with, mandatory teaching show. It has has great humor, learned opinions, realistic approaches to what middle class America can afford, and a true hands cooking style that has taught this old dog many new tricks and tips. I try not to miss any issues. And at 69 years old, cooking since I was a wee one at me Nan's side, I have been cooking for some time! But you are never to old to listen and learn.

      Yeah, I have the same problem with mine. I think I bought the same racks (previously recommended by ATK, probably). They’re ever so slightly too big. It’s not a huge problem though as if you are using the rack, you aren’t trying to keep something level.

    I got the pans with the wavy design on them from Costco or Sams... very rugged. I think its nordicware brand also. Have used them for a year now doing lots of baking and they are good as new. The wavy pattern IMO makes it super easy for releasing things from the pan. For example french fries or bacon slices dont get permanently stuck.

      I know it's been eight months since you commented, but in case you haven't bought them yet, note that ATK no longer recommends the Libertyware cooling rack. They now suggest the Checkered Chef Cooling Rack, their former 2nd-place rack. They say: "UPDATE, FEBRUARY 2019: We continually monitor the items we review and recommend. Recently, we noticed that the quality of our favorite wire rack, from Libertyware, had become inconsistent. We now recommend the Checkered Chef Cooling Rack, which had originally come in second place. The rankings have been adjusted to reflect the change. I am definitely saving this video for future reference. I have resisted buying half sheet pans because they seem smaller to me than the standard rimmed cookie sheets found in a lot of kitchenware stores. But I'm also sick and tired of having my pans warp, and ending up was pans that are difficult to clean, no matter how much I try to take care of them. They stain and darken much too easily, and I don't like brushing out and buying two cheap hands every 6 months. I also have not been able to find, until now, cooling racks that fit neatly inside these rimmed baking sheets. Thanks, ATK, for doing the heavy lifting for me and making these recommendations. And Jack in particular. We appreciate all you do.

    I just learned how to season new baking sheets with a little bit of oil, and what a difference it makes in how they perform. I'm going with Vollrath pans as they supposedly warp in a way that sheds oil and juices to the corners of the pan rather than pooling in the middle. We'll see if that is the case.

    Is the liberty cooling grid the GRA4 (chrome plated) or the GRA4-SS (Stainless steel)? (Or GRA2/GRA2-SS)?

    • @garybyma7502
      @garybyma7502 2 года назад

      Fun fact, stainless steel is an iron alloy which contains about 11% chromium in addition to carbon, nickel and other elements. The chromium oxidizes and forms a protective layer that makes stainless steel rustproof. And the chromium is also self-healing in the presence of oxygen if some the protective chromium oxide is scrubbed off during cleaning.

  • @strll3048
    @strll3048 4 года назад +1

    Can these be scrubbed with SOS pads or a thicker metal thread - type scrub pad without destroying their surface? I also think that the cooling rack does not fit perfectly. A roast could slide off that, as someone mentioned further down.

    • @iDuckman
      @iDuckman 2 года назад +2

      Please NO. Not only will it score the surface of the pan (a bad thing), it will remove any built-up seasoning. Wash with soap and water. Don't even use the dishwasher.
      The racks, OTOH are stainless steel IIRC. So a mild scrubbing, maybe. Soaking first helps a lot. And I do dishwasher them.

      Soap. Hot water. A brush and a sponge. Don’t worry about getting them spotless. If you cook on them a lot, greese will discolor sheet pans. It doesn’t affect how well they work or the quality of the food. Remember that the cooking tools you see on TV cooking shows are always new or close to new. ATK showed what their ceramic dutch ovens that they use for testing look like. They are NOT pristine white like the ones you see in their video segments and shows.

      @@bcbock but also warps more readily, over the years ( or a year ) it will eventually warp with frequent use, stainless will warp more slowly, especially if it's a decent thickness. also stainless is much more corrosion resistant. i would prefer slightly less browned cookies, and something that lasts much longer, lower cost in the long run. also if that rack is iron with chrome coating it will eventually corrode after scratching of the coating.

    They don't take cleaning into account. Pans with the rolled edges will collect grease over time and it will never come out. I worked at a bakery that massed produced pita bread my hand, and the pans would constantly leak black burned grease onto the roller racks and the pans (and pita) below creating a massive mess and a lot of nasty smoke. My boss ended up throwing away about 400 sheet trays because of the grease, after we tried every trick in the book to get them clean. Of course he bought the same pans to replace them and started the whole problem over again, but that was his mistake. If you use the pans to cook oily anything frequently, save yourself the headache and buy pans with straight edges.

    • @tomsparks6099
      @tomsparks6099 4 года назад

      If you throw out a good sheet pan because of the stains and cooked on grease, sorry. A good pan is a good pan and it can always be lined with foil or parchment. I have made jelly roll cakes and cooked on debris NEVER transfers. Stop wasting your money.

    • @jacobz927
      @jacobz927 4 года назад

      @@tomsparks6099 Like I said it depends on the pan. We had about 30 pans that did not have rolled edged (enough for one rack/batch) and they were easy to clean, and were kept. My point is that they mostly show pans with the rolled edges, which hold water and grease (not sanitary) and cause build up (heat cycles will cause congealed grease to melt and leak out then burn on) when used in wholesale applications. I know these reviews are for home cooks and the like, but I want anyone who owns a business who may look at these reviews to know that how they cook and if the warp is not the most important aspect of the pan. If it has enough support to hold heavy items and is quick and easy to clean is the most important when looking at production. An example : When I worked at a bakery producing gluten free pita we (me and other employees) noticed a lot of black build up on the pitas as they came off the pans. We alerted the owner/manager/boss about the problem and we proceeded with soaking and scrubbing all the pans (there was 390 of them, full sheet pans) every month, losing a day or more of production. It never worked and the mobile oven racks got covered and began to drip too. That's when my boss threw them all out (made some scrappers day) and bought new ones. Never solved the issue, the rolled edges are the problem. Sorry this was just and FYI to anyone thinking of opening a bakery, don't buy rolled edge pans.

    There was a review on amazon where they showed that the metal literally came off the recommended Nordicware sheets with each wash and that they were having metal problems in their body. They showed multiple towels with the metal coming off with each wiping - it was kind of disgusting. Did you test for this? You need to verify this because if it's true, that could be a horrible health hazard.

    I just threw out my Nordic Ware baking sheets. I went to butter a baking sheet, and silver metal came off. Them I pulled out another Nordic Ware sheet pan, and the same thing happened. Then I pulled out an older sheet pan, which had a nonstick coating and it was even worse.Put all three pans on the table, for my husband to carry out with the trash. The cleaning lady saw them, and placed them in my oven, unbeknownst to me. Later, I heated my oven and noticed smoke. I opened the oven door and a ball of white smoke billowed out and hit me in the face. I wound up with Teflon flu! It is only stainless steel baking sheets and pans for me now! I don’t care about how well they conduct heat or not! They’re toxic!
