ALSO if you live in the states you can buy it at Walmart, Safeway, Albertsons and FredMeyer. That I know of, if you're of hispanic descend you know you can get it in any hispanic market. If you live in a smaller town like myself you can also access it at a local butchery. They tend to save the organs and the such for dog feed or the other so they tend to sell it cheaper because of it. I have never cooked it myself, but my mom makes it often, the only thing I know to so is to make sure you peel the thick layer that holds all the tastebuds of the cow BEFORE you eat it. Here the tongue seems to be peeled already SO DON'T FORGET!
finger licking good! i've tried Tongue steamed, boiled , baked,stewed , but never ever Grlled , Tongue has a very tough tendency and needs to be cooked for an hour at least! yet in the vid it looks so tender and jucy! either it was the tongue of a very young calf or it was spiced in baking Soda and left to cool for an overnight ,that trick really helps in softening fibers and muscles! in any case i loved the vid! i hold my Tongue! ))

No. The taste buds were in the outer skin such was removed before this video even started. What was sticking to the grill was meat on an unevenly oiled iron surface. It looks like that because of the scoring he did during prep cutting.
As for the steaks he’s grilling, well, they look good even though, they are a bit on the raw side. As far as the marinade and the dipping sauces go, does anyone know what they are and how to prepare them?

However knowing the acidity of lemon it’s actually fairly safe as most bacteria will not grow in such a acidic environment. The dirty cutting board and chiefs fingers are a far greater vector for transferring nasties.

Normally to remove the skin, tongue is first poached, although this looks raw. Was the skin simply sliced off with all the waste that entailed?
