For a buffet place, that is exquisite presentation! I'm glad you got to meet the chef personally. He looked so shocked when you called him a genius. But if that is the level of experience he gives in his restaraunt, what he allows to be served, how it is presented, ... he truly is. Thank you for sharing this with us. That's because the place he went to what was considered a high-end place in the Philippines. Also in all fairness to any restaurant here, if you charge a good chuck of change, they will deliver on both food and ambiance.

I have NEVER seen cuisine like this! Mike really shows off some food from what (I'm assuming) is one of the finest restaurants in the Philippines. But also, some of these items left me dumbfounded! Who thought of these foods and how did they make them?! I'm so impressed and SO jealous.

That pork belly pyramid was beautiful and without the buns, would totally be good on my low carb diet. The mushroom and carrot dim sum was the cutest dish ever. For people saying Ew to the chicken feet, the outside of them peels off like a banana skin; even the nails have an outer covering that pulls off.
This place looks beautiful and Chef Jimmy was a pleasure to watch. So down to earth and humble. But that fried rice paper roll with shrimp and mango...that pork belly pyramid?!! Take me now lord! 🙌🏽🤣🤣

Filipino cuisine I find has had a very very slow rise to mainstream. I learned a few dishes before going into chef school and asked all my profs what their take on Filipino foods, all of them said it'll never be a thing because it was primarily vinegar based stews (guess all they ever had was adobo). But man some of the stuff I had like kare kare, pancit, and kaldereta, I wanted to know more. Slowly people are catching onto it, and thank God!

well you can also try all you can eat korean and japanese cuisine for $20 in Sambukojin... or an international cuisine all you can eat for $25 in Vikings... its super cheap and if one of your friend celebrate his/her birthday there he/she free as long as your friend tag along a 1 paying friend
He's in the Philippines. To us that's 1000+ pesos. Not everyone can afford a meal like that here. Heck the minimum wage is 500 pesos per day so it's basically 2 days salary for one meal.

That pork pyramid is the posh version of one of my favorite dishes. Yunnan pork leg stewed in the gravy with mantou, but here they used the belly instead.

Here in the Philippines the worth $20 is equvalent to 100$
$20 is now expensive here in the Phils.....My Allowance in school is P250 a week($5 a week) and I can still save $1
