      I would also Imagine That even short-term storage that the fatty tuna would also just absorb itself much salt and just becomes super salty on top of it's fattiness.

    An old japanese friend of me told me that: eating sushi with hands is a way maintain the connection with the cook who made that sushi. He made it by hand, so it's a "From hand to hand" human connection act.

    It's interesting because some sushi places in the US will have their sushi come pre-sauced, so it's kind of hard to eat it with your hands without making a mess.

      Heyhey, it's the culture bridge man! Been watching your stuff since I was, genuinely, a child.
      and yeaaah, sushi in (almost!) any nation outside of Japan is going to be questionable.
      Almost! I am sure some people have mastered it, but we have sushi conveyor restaurants here (UK) and... they don't quite match up.
      As for the sushi geta, I learnt this from a Yakuza game. (>.

    Similarly to fatty tuna, lobsters used to be considered low-quality food, only eaten by poor people who live by the sea, and more popularly used as fertilizer. Once they could can and freeze food, it became a delicacy in inland cities. Today, it's one of the most expensive foods out there. Poor people usually can't even afford it.

    I live in the USA, but I happen to be a sushi chef. Most of it is very different from traditional sushi, there's quite a few of them with some amount of sauce involved, and even some with cream cheese (called Philadelphia rolls, named after a brand of cream cheese, and is paired with avocado and smoked salmon). Most of our rolls are uramaki, too.
    One of my favorite uramaki rolls is spicy tuna, which uses ground tuna (mixed with shichimi, toasted sesame oil and sriracha), and avocado. The roll itself is topped with some extra bit of shichimi for garnish. And now that I'm thinking about it, I'll probably have one for dinner tonight.

      Things like avocado in sushi confuses me. Sushi, invented in Canada, named after a place in the USA, using ingredients from Mexico. that's the california roll! :D

      If the rice (Japanese short-grain) hasn't been cooked with kombu (kelp), and then seasoned with vinegar, sugar, and salt, the final product is not "sushi," but merely a rice roll.

    Gari is definitely one of our favourite parts of eating Sushi and is a wonderful palette cleanser, admittedly though for quite some years we used to put it soy sauce and eat it along with the Sushi.

    "Fatty tuna was garbage."
    This happens with fish. They go in and out of style. Another example is what we now call "Chilean sea bass" - it was considered garbage fish fifty years ago. It became chic in the 80's, but before that nobody wanted it. Go figure. 😆

    It's nice to know I instinctively have been using gari correctly. I keep a jar in my refrigerator, and will nibble a piece or two just because I like the taste so much.

    Awesome video! I love sushi! It's my favorite food in the world! I've yet to taste true authentic Japanese sushi. Hopefully one day, now that Japan's opening back up, when I visit, I'll be able to go a nice sushi restaurant! Any recommendations of which sushi restaurant to go to?

    I was in Japan for 3 weeks in 2018. And not ONCE did I eat Sushi there, because my travel companion didn't fancy fish and was more interested in Ramen. Until this Day, I regret it so much ; v ; We do have an Asia Restaurant that makes delicious Sushi but it would have been so much better eating Sushi in Japan , haaaaah...the pain haha

    Honestly, why is Sushi not a street food anymore? 🤔 I would love to see like an Edō Style food stand in Japan, where you can just grab a large piece (with your hands) and go.

    Curious - What do you do with Soy on Maki rolls? Do you dip the maki in sideways so the soy goes on the nori? Or is Sushi in restaurants mostly nigiri so this isn't a problem in Japan so much?

    40+ years ago I was in Japan visiting a restaurant by myself. I didn't know what it was called but it looked so tasty so I ordered the same food as some other people had. Many years later I learned that it was called sushi.
    Last week I tried the first time USA-inspired sushi, I will never order it again.

    I heard that it was only apopriate for men to eat sushi with hands because women are supposed to serve the guests on the table and couldn't touch other people's food. Glad to know that it wasn't the case.

    Fatty tuna became expensive because it's rarer compared to the whole body of the fish.
    Just like lobster.
    Lobster was a poor people's food elevated to elitism.
    (just as sushi was but don't tell anyone)
