Delicious Hungarian Fisherman's Soup In Budapest, Hungary (Traditional Food) 🇭🇺

  • On this episode i tried some fisherman soup which is a native dish found south of Budapest from Szeged which is roughly between 2-3 hours from Budapest. Due to insufficient time i wasn’t able to travel down south so i searched the internet and found this cool resturant which was 10 mins away from where i was staying.
    They had good reviews so i decided to give them a try and i really enjoyed it. i'd say it was value for money and the staff where very friendly. The seating outside gives you a nice view overlooking the river where you can see europes second longest river Danube.

    The red paprika powder used for cooking is made with a special, red pepper that’s dried and ground up into a powder.
    What you were given with the fish soup is a different type, a hot, pointy pepper which is always used fresh and thinly sliced to spice things up.
    I’m glad you enjoyed the soup.

    It is a river fish broth, which is typically intensely seasoned with paprika and several other piquant herbs. Traditionally this soup is cooked outside, over a fire, for several hours. That instantly brings out the intensity of the flavors. The fish, its main ingredient, is always locally sourced from the Danube or Tisza. Fish soup is usually made from carp, catfish, perch and small fish. The soup is flavoured with dried red pepper, which can be hot or sweet. Sliced green peppers are slightly hot and are usually added to the soup (if you like it hot).

    Paprika means pepper in Hungarian. It does not matter if it is grounded red pepper or bell pepper or wax pepper etc.
    For some reason the World incorporated the word paprika into their vocab as the red paprika powder. 😊

      This is interesting facts, I did realise this during my stay.
      Very true we’ve been made to think it’s the red powder 🤣. This is why I like to travel , you get to learn new things

      English uses the same word "pepper" for two very different plant:
      -the black little roundy spice you ground and use as "salt and pepper"
      -all kinds of paprika plants, definietly a different stuff
      In hungarian we use "Bors" for the little black stuff powdered as a spice, put on tables with salt in a shaker.
      And we use the word paprika for every kind of fleshy plant of the paprika family, actually originating from the americas it really spread in hungary, we have hundred different size, shape, color, spicyness and thus usage. We also make dishes like stuffed paprika (with minced meat and rice) cooked in a tomato sauce. The red ground spice which makes all hungarian dishes and meat products red is made of a red colored, usially pointy type of paprika, the strung them up on a string like beads, let them dry hanging outside on the sun and wind, when it totally dried out they ground it in mills to a powder, thus creating the red paprika powder spice. I always wondered why they did not made such powder from green paprikas, probably the 45 years under communist rule of russia prefered the red color in every dish as a propaganda :) Before the 2nd World War, Hungary had much wider gastronomic spectrum, especially with the spices. Also today's famous traditional desserts, cakes originates also from that era (1880-1910).
      Since the end of the soviet rule (1989), Hungary was struggling to renew, reinvent its earlier gastronomy and especially wine making competency, grape species, traditional methods. The rebirth is very slow, also mixed up with foreign influences, new wave foods, but lately seems to getting a reneissance, usually outside of the capital in rural, quality restaurants near holiday regions.
      By the way, it is old beef between hungarians, which fisherman soup is better: there are two fishsoup originating regions, Szeged and Baja. You guessed right, you had the Szegedi-er style soup. The Bajai style has thin long pasta in the soup, while the Szegedi cooks the soup with some crushed fish meat making the soup naturally thicker.
      We also ask for fish eggs and milk as an extra, they cook them in the soup broth, and serve in a little bowl. Very rich and tasty put into the soup.
