Knowing how to cook decent meals while boondocking is a must. Someone always ordering out for food at home should learn to cook meals before getting into RV boondocking. IMO.
Hey Kate I add green chile's to my quiche with some sausage and cheese. I pour it in a pie crust so it resembles a pie and it's delicious. We have it alot on Sundays for a brunch and it never lasts long. Loved the video guys..... Thanks for all the travel information. Hugs from Minnesota

Shelf on camper -- we use two per side, but keep open flames away from the rig. 2003, we converted a 1997 Ford CF8000 to our concept of an ExpeditionVehicle. After nearly two decades full-time live-aboard -- summers around remote mountain lakes, winters on isolated Baja beaches -- we think less is better.

It seems like some kind of table that could attach to or unfold from the camper/truck somehow would be nice. Cooking and food prep on low camp tables is a major pet peeve of mine and most camp tables max at 30” tall (your side table is shorter than that-I have one) and ideally 36” tall-kitchen counter height. Saves your back.
If you like old forts of the Southwest checkout Ft. Union in New Mexico. So many more structures trails and interesting stories, just pack somemore muffins.
