Usually, caramel still maintains a lot of the sweetness from sugar, but caramel is 'burnt' meaning that more of the sugar has been allowed to decomposed from sugar to bitter. Once its mellowed with creams and chilled the flavor is much less burnt and much more "complex sugar".
Pistachio gelato is just....WOW. Avolato, unreal. That burnt caramel, INSANE! Makes me think of the crazy ice cream places I've seen and been to in Singapore. Please, do London's Best Chinese Food, genuine Chinese!
Butterknife Folk is an awesome place. I highly recommend their slow drip coffee flavour if its available as they change their flavours everyday. Apiary is also great too, kinda hidden in the Chinatown area and decent selections.

In south-east Asia, avocados are usually seen in ice cream, smoothies or shakes. While there are some combine it with coconut to be a mousse or ice cream as well. rarely saw them in cakes or warm desserts.
I like pistachio very much. I also dislike avocado a great deal. The LN2 icecream interests me for the novelty factor, but that pistachio gelato is very much my cup of tea.
Make a trip to hoppers if you can. Honestly an amazing Sri Lankan curry house - be warned you cannot book in the frith street location but utterly worth it

I visited London this June for a couple of weeks and no joke, we went to Gelupo 3 different times (twice in the same day). It's so good. The mint stracciatella is amazing but my favourite was the sour cherry and ricotta.
There used to be a nitro ice cream place in my neighbourhood but it burnt down. Pistachio gelato is nostalgic for me because I would always have that for dessert at Italian restaurants as a kid and if I were in London that would be the one I'd try first.

I went to Chin Chin last weekend and had the burnt caramel with grilled white chocolate chunks and hazelnut sand....it was beautiful.... As for Snowflake....standard! One of my favourite Gelato spots in London...

There’s a DC-area ice cream shop that makes ice cream this way. I’ve never been but it exists. The place is called Nicecream.
There is a place in Cincinnati called The Buzzed Bull I found online. There are actually quite a few liquid nitrogen shops in the US
There's a place in Philly too. I hope you find one in your area, it's great to try out but it's definitely pricey!
